About ATX Jerky

ATX Jerky is what happens when a wilderness-trip snack gets taken a little too seriously. The brand’s own story starts in the northern woods, making jerky for trips into the wild with a simple dehydrator and pre-mixed flavor packets. That quickly turned into experimenting with spices, and the kitchen became the lab. ATX Jerky calls itself a team of beef jerky artists and says each flavor is tested to perfection. Today it describes itself as a family-owned Texas business with 20-plus years of tradition. Its retail store and jerky kitchen are in Elgin, Texas, and it sells at farmers markets around Austin, Waco and Bryan/College Station.

What makes ATX Jerky different

The shorthand is Small Batch Jerky, Big Time Flavor, and the site header promises High-Protein, Sugar-Free, No MSG. Most beef pages list grass-fed beef, a house sugar-free seasoning salt, and no additives, preservatives, MSG or fillers. The range splits by cut: Tender Jerky, labeled most popular, Tough Jerky, the traditional cut, and Crispy Bacon Jerky.

ATX Jerky flavors we carry

Most of what you’ll find here is tender-cut beef, the style the brand describes as tender to chew, seasoned with onion, garlic and pepper. If you want mild, the peppered and garlic recipes have no heat called out, and the garlic one is billed as three times the garlic of any other flavor; the original adds a pinch of cayenne. For heat, it builds in steps: black pepper and cayenne, then a sweet-and-hot version with the house-made teriyaki, then a recipe that belongs with our Carolina Reaper beef jerky. There’s also a Kansas City BBQ rub finished with KC Masterpiece, a pizza-style strip, and a hickory-smoked traditional cut with gluten-free soy sauce and Worcestershire. Browse our peppered beef jerky and the full beef jerky shelf for more.

Beyond beef, the turkey jerky is all white meat tenders, peppered or original, marked very low sugar; see the rest of our turkey jerky. The bacon jerky is crispy bacon, in the brand’s words, sold plain with a pinch of sea salt, peppered, or in a sweet BBQ version with the same Kansas City rub and sauce, filed with our other bacon jerky. Everything currently in stock is in the grid above.

Who it’s for

Heat runs from nothing called out to Carolina reaper, so pick your lane. Texture is the pitch: tender to chew on most beef and turkey, whole strips on the tough side, crispy on bacon. Every flavor we carry is marked gluten free by the manufacturer, and most are marked sugar free or low sugar. No ingredient lists or allergen lines are published; the descriptions name soy sauce and Worcestershire in the hickory-smoked cut and teriyaki in two beef flavors, so check the bag if you have an allergy.
