About Wyoming Authentic

Few jerky brands can name the exact ranch behind each bag. Wyoming Authentic is the snack line of Wyoming Gourmet Beef, founded by David Fales, whose family left Missouri in 1918 to homestead and raise cattle near Deaver, Wyoming. Fales was born in Cody in 1949 and grew up helping his father feed cattle. After more than 40 years working abroad, he returned to Cody in 2009 to help his elderly father. His father died shortly after, and Fales stayed to establish the company, with his wife Kristine Fales as creative director. He bought his first 100 head of cattle in 2011. In 2013 the company built what it describes as the first USDA processing plant in Wyoming, where the snacks are still hand-cut and hand-packaged.

What makes Wyoming Authentic different

The brand sources cattle exclusively from Wyoming ranches, and every bag names the ranch where that beef was raised. Its all-natural promise is spelled out: no added hormones, antibiotics, MSG, nitrites, nitrates or artificial ingredients, with celery juice powder and sea salt handling preservation. The cattle graze mostly on Wyoming grasses and are grain-finished for a few months, which Wyoming Authentic says it prefers for taste. Ranchers sign a humane-treatment affidavit, and the Wyoming Business Council audits the ranches through a third-party verification program. The jerky is whole-muscle, built on nine or fewer ingredients and made in small batches.

Wyoming Authentic flavors we carry

Every bag is 3 oz., and the range runs from plain to seriously hot. If you want the recipe the brand started with, the original-style beef jerky uses seven ingredients, sweetened with pineapple juice concentrate, with no heat called out. The honey version uses raw honey from Worland, Wyoming, and is described as mild, tender and barbecue-style. If you like sweet and heat in equal measure, the sweet and spicy beef jerky is billed as a whole lot of sweet with just as much spice, softened with raw cane sugar. At the far end, the peppered beef jerky is seasoned heavily with black pepper, crushed red pepper and jalapeño powder; the brand's own advice is to keep water nearby. Find it alongside other spicy beef jerky picks in the store. Everything currently in stock is in the grid above.

Who it's for

You get a real spread of heat: nothing called out on Original, mild sweetness on Honey, balance on Sweet & Spicy and a fiery kick on Peppered. Texture is whole-muscle throughout, with Honey and Sweet & Spicy described by the brand as the more tender chews. According to the manufacturer, Original and Peppered have zero carbs and zero sugars and are consistent with keto and paleo eating, while Honey and Sweet & Spicy contain honey or raw cane sugar. No product page lists a Contains line, and the brand states its snacks contain none of the eight major allergens, wheat and soy included.
