Original Smoked Salmon Jerky is made only from hand-filleted salmon. The fillets soak overnight in a traditional brine and are left to dry. A cold smoke under 100 degrees gives them the unique wood smoked flavor and locks in flavor and moisture. A hot smoke at 165 degrees then fully cooks the fish. It is made with soy sauce, brown sugar, sesame oil, pepper, ginger and garlic, and the taste is wonderful.
The jerky is solid strips of fish, hand sliced, never minced, chopped or formed, and some pieces have the skin attached. In the package the pieces are dark, glossy and varied in size. Mountain America Jerky has made premium quality jerky since 1997, and this one is 100% handmade.
