Mountain America Jerky - Peppered Salmon Jerky, 3 oz

Freshly cracked black pepper complements the natural richness of wild caught Alaskan King salmon. Garlic stays at a hint, and the jerky has a unique wood smoked flavor. It is seasoned with soy sauce, brown sugar, sesame oil, ginger, garlic and cayenne.

These are solid strips of fish, hand-filleted and thick cut: no mincing, chopping or forming. The fillets soak overnight in a traditional brine and are left to dry. A cold smoke comes first, then a hot smoke that fully cooks them. The pieces are deep reddish brown and glossy, with black pepper flecked across the surface. Some pieces have the skin attached, and an occasional bone is possible. It is 100% handmade, marinated and smoked daily, and preservative-free with no added MSG, nitrates or other fillers.
