Side Project Jerky - Cowboy Flavor Beef Jerky, 2 oz

There is coffee in this jerky: the signature Whistle & Cuss roast from Rival Bros. Smoked paprika and balsamic vinegar join it to replicate the flavors of burnt ends, something every gentleman and cowboy can respect. Cowboy is sweet, smoky, earthy and spicy, an homage to the Texas panhandle. It rates 60 percent sweet and 40 percent heat. It is made with tamari, dark brown sugar, oregano, garlic powder, cane sugar and kosher salt.

On texture, it rates 70 percent dry and 30 percent soft. Cowboy is Side Project Jerky's second collaboration, created by Chef Jon Adams and Damien Pileggi, best friends and business partners. Adams brings the kitchen chops and Pileggi the coffee roasting skills. Born in Philly's food scene, Side Project Jerky makes chef-crafted, small-batch, slow-dried jerky inspired by global cuisines. Cowboy is gluten free and non-GMO.
