Chile Lime is carne seca, a delicacy in Latin America and Northern Mexico. It is steak seasoned with chile and lime, then air-dried. The flavor is bold, zesty and craveable, and each bite blends smoky, hot and cool. The seasoning is a combination of citrus and heat, with orange, lime juice, garlic, onion, paprika, celery salt and cayenne pepper on the ingredient list. It rates mild, one pepper of five on the Vacadillos heat index, a little sizzle. That makes Chile Lime the mildest flavor in the Vacadillos lineup.
The cut is tender round steak, hung to dry and then sliced thin into lean strips. The slices are deep red, with white marbling showing through.
