This is carne seca: steak seasoned with chiles and lime, then air-dried. Habanero is bold and intense, with mucho sabor. Each bite blends smoky, hot and cool flavors. It is made with habanero chili powder, cayenne and paprika, plus orange, lime juice, garlic and onion. It rates HOT, not for the faint of heat, and 3 of 5 on the Vacadillos heat index. That puts it above Chile Lime and Chipotle Honey in the lineup and below Scorpion.
The cut is tender round steak, hung to dry and sliced thin into lean strips. In the front photo the slices are deep red with a red-orange spice edge, fanned beside a whole habanero. It is air-dried, with no MSG, no gluten and no artificial ingredients or preservatives. The beef is inspected and passed by the U.S. Department of Agriculture. Carne seca is a delicacy in Latin America and Northern Mexico.
