Jalapeño, crushed red pepper and cayenne together make a slow burn instead of a sharp one. It is rated hot: enough to notice, and not so hot you cannot finish the bag. Beyond the peppers it is seasoned with salt, black pepper and other spices, garlic and onion, with no artificial flavors and no MSG. Because it is smoked, never dehydrated, it tastes like beef and not just like seasoning. Food & Wine recognized this jerky as one of its Top Ten Test Kitchen Discoveries.
The beef is whole muscle, trimmed by hand into real cuts of meat, not ground and pressed back into a strip. Every piece gets a dry rub, goes on the rack by hand, and spends hours in the smokehouse. It is fully cooked and tenderized with papain. Through the clear vacuum-sealed bag the strips are dark brown and glossy. Stripling’s General Store has made its food small-batch and naturally seasoned in South Georgia since 1964. This jerky is produced in Moultrie, Georgia, with no nitrites.
