About PREVAIL Jerky
Not many jerky brands can trace their start to a raw carrot, but this one does. In the brand's own telling, co-founder Ashley spent years in a cycle of allergy flare-ups and inflammation, with swollen lips from a carrot and an itchy throat whenever someone cut potatoes nearby. In 2004 she was diagnosed with celiac disease, and that diagnosis sent her toward a gluten-free and Paleo way of eating. Feeling like herself again came with a catch: protein snacks that tasted good were nearly impossible to find. Glen, her co-founder and the site's self-described meat mastermind, set out to build a jerky that was tender, flavorful, high in protein, low in sugar, lower in sodium and free from the top allergens. The more the two shared it, the more they realized nothing else quite like it existed, so they decided to PREVAIL. Today the Chicago-based, family-owned business states its mission as making clean, allergen-friendly protein snacks that anyone can enjoy with confidence.
What makes PREVAIL Jerky different
The beef is 100% grass-fed and grass-finished, sourced from a co-op of family farms in New Zealand where, according to the manufacturer, cattle can stay on pasture all year. The turkey comes from family farms in the US that the brand describes as certified humane. Marinades and spices are stated to be 100% organic, and there is no soy anywhere: the sweet-savory and lemongrass recipes get their depth from organic coconut aminos, a Paleo soy sauce substitute. Instead of artificial preservatives, the meat is cured with coconut sugar and sea salt and then smoked over cherry wood. The company says the smoke both preserves the jerky and adds flavor, and bags should be refrigerated after opening. The jerky is certified gluten-free through the Gluten-Free Manufacturing Program, Certified Paleo by the Paleo Foundation and Keto Certified, and it is cane-sugar free. PREVAIL also states it is free from all top 8 allergens, with the caveat that every flavor contains coconut. Good Housekeeping has named it Best Beef Jerky in 2023 and 2024 and Best Turkey Jerky in 2025, according to the awards listed on the brand's press page.

If you want a baseline, the original beef is the brand's case for keeping things simple: a nontraditional spice blend of garlic, matcha, ginger and cardamom that it likens to backyard barbecues, with no heat called out. The rest of the grass-fed beef jerky range wanders further afield. There is a lemongrass recipe with garlic and Sichuan peppercorn that the brand calls a sweet and citrusy zest, and which it says is its most subscribed-to flavor. There is a sweet-and-savory one built on coconut aminos from aged coconut sap with a hint of orange juice and sesame, pitched as a cleaner answer to the teriyaki of childhood. There is a taco-night beef that folds chili, cumin, onion and oregano into one on-the-go bite. For heat, the spicy beef jerky uses smoked Morita chiles from Mexico. PREVAIL describes them as smoky and fruitier than the average pepper, with a subtle chocolatey sweetness that nods to mole and a heat that builds rather than scorches.
On the poultry side, the cage-free turkey jerky comes two ways. The original smoked version is one the brand compares to backyard BBQ, with a hint of coconut sugar and sweet cherrywood smoke. The hot honey version pairs organic honey with chipotle Morita powder for what it calls a slow, teasing burn.
